If you're trying to bulk your legs up I'd have to say leg presses. Same motion as squats but since you lay down you don't the stress on your back.

Unfortunately if you want to build leg muscles, squats, and leg press are the fastest way to do it (using resistance of course). Hamstring curl and thigh extension machines also help, but the latter develops muscles you will never use for anything so it's rather pointless.
Hiking, biking etc tends to develop leaner more ripped muscles rather than bigger muscles. I been cycling like crazy 3-4 years now and my leg muscles are still relatively skinny.

Typically endurance sports like running, cycling swimming etc develop stronger leaner muscles but will not make them any bigger, perhaps only very slightly depending on your build to start with. It is your cardiovascular system that will be getting the most benefit.
To build muscle you need serious resistance training and a high protein diet. Look at the athletes that compete in worlds strongest man, ridiculous muscle volume, but it takes them a ridiculously long time to recover from each effort because they are so out of breath, this is because they just pump iron all day every day and do not do any cardio work.
