Hmm, Monk PDT build usually will consist of the options you put there Cat. Add a Black Belt and Boxers Mantle, Hades Sainti if you have them.
The other slots I'd probably stick with your usual TP gears. MNK AFv2 hands, Haidate, Fuma feet, Faith Torque and w.e you use on your earrings. I'm no mnk, but its what Ive seen monk tanks do in the past.
Can always add in Orachi Nodawa neck, or Collossus earring if you need an extra bit of PDT and Regen

-PDT set isn't even useful on NIN outside of a rare few situations where the NMs could potentially one-shot you otherwise. Which won't happen on MNK in Campaign. Not even by the strongest NMs.

There's really no reason not to use Jelly Ring because that would give more of a benefit defensively than any other ring besides Bomb Queen Ring which you can't use yet anyway, even if you did have it.

no, stop. what's max hp going to do, let you lose less enmity when you get hit-- oh wait, you're soloing. if you're taking more damage than you can cure as /dnc, then a pdt set is a good idea.
If you're taking more damage than you can cure, you switch to a Counter set and use Counterstance.
taking damage and curing it contributes to xp gained from campaign.

For tanking, I would use /NIN with a max HP set. Adding HP will almost always benefit you more than adding -PDT. Even PLD doesn't concern itself with -PDT, why should MNK? Granted, MNK has better -PDT gear, but it also has some serious +HP gear.
For solo, I would /NIN with an EVA set, and fulltime Counterstance for when shadows are down.

TP gain is terrible on mnk, using a DD set you'll just kill yourself by getting hit too hard unless you're DD'ing with Usukane.
Here's what I use in campaign without even trying, DD/TP isn't a problem.

Counterstance and -PDT sets are a lot better considering MNK tanks. If shadows are down, still have that 50% chance to counter I believ it is, and if you do get hit, the low defense you have with counterstance, the -PDT will migate that damage even more so

evasion, max hp, and pdt have their places. obviously you're not really going to worry about pdt when shadows are up, etc. he's just leveling up mnk in campaign and didn't really list any other scenarios, so those points are pretty moot.
i don't know how well you'd fare soloing mobs in campaign at that level, but a lot of normal mobs are fairly easily face-tankable, such that at higher levels any kind of defensive set is pretty pointless on those mobs.
regarding nms, deathlord rojwhatshisface likes to go around hitting people for 2k with no crit.

my server's pretty different; shells are recruiting just about everyone, so those shells don't really decrease their demand for items.
