For example, my F2 key adjusts my screen's brightness. Do any of you know how I can change this so that F2 will be the FFXI shortcut, targeting <p2>?

If you're on a laptop, you probably have your Fn keys set to enabled by default. You can confirm this easily by holding the Fn button and pressing F2 to target. Assuming this works, you need to adjust a setting in the bios to correct the default.
