If you have money to blow, go with smithing, if you got even more money to blow go with goldsmithing. I personally don't see much profit in other crafts, or at least not on my server. That's the reason why you are seeing a lot of new smither's and prices kinda slowing down. That's because there are more people attempting the crafts and therefore more of them popping up. Then again, at least this is the case on my server. Then again Goldsmithing only really has desynthing geodes and I think you have to be 101 to have a decent rate/chance of HQ3. At least you can profit off of smithing if you're smart with it and aren't power leveling the ***out of it.
I made millions skilling up smithing from 50-95ish and then it starts to hurt 95-100. Then once you get to 100 (Prices vary by server of course) you'll be spending about 200-300K a synth, which is about 3M a level IF you were to get a .1 skill up every synth. Just about every skill-up after 100+ will usually result in complete loss unless you HQ, and even then you'll be lucky to find a buyer for that item unless you happen to HQ some hexed gear 104-105+. FYI: I used NO MATH when I used these numbers, I used basic prices will as always vary per server.

EDIT: None of this information is 'official' and was all off the top of my head as I'm sure there are other profitable synthesis' in other crafts as well. Goldsmithers: Don't hate please, Geodes is the only thing I know of as a smither that is profitable, correct me if you feel the need.
