Wouldn't that just mean essentially whatever she ate now would just directly go into her intestines... and well... out the other end? does she at least still have some way to digest all the food?

Well, your stomach basically begins breaking down food and feeds it slowly into the small intestine where it is broken down further and begins to be absorbed into the bloodstream. Your small intestine continues the breaking down process though, so by cutting out the stomach, the small intestine pretty much does all the work. People without a stomach eat far smaller amounts because they feel full very quickly as the intestine overloads without a stomach to catch the food and pass it to the intestine at a comfortable rate it can handle. Eating very little and often is the way to go without a stomach :O
