There are ways, but they're all a massive pain.

VIT: This can be found by hitting the monster with uncapped fSTR if you know the other variables involved.

AGI: This can also be found by parsing your crit rate at known DEX values. It can also be found by smacking a monster and figuring out how much TP it got with Charm or Soul Enslavement, then reverse engineering their AGI from your dAGI.

INT: This can be found by nuking the monster, then reverse engineering it from the magic damage formula. Magic WSs with dINT factors also work in the same way.

MND: This can be done in a similar way as INT using a magic WS with a dMND factor, like Garland of Bliss. It can also be done using enfeebles, but it's incredibly difficult to do get detailed information on your enfeeble potency unless the enemy is a non-NM and you can use /check to analyze Distract. Undead MND can be found by hitting them with cures and reverse engineering your dMND.

CHR: I remember people on the Blue Gartr forum seemed to have found a way to determine your dCHR using Gauge and looking at packets (because the packets give you actual numbers, instead of the vague messages the client gives you), but I don't recall the specifics, and that only works on enemies that are both charmable and have neutral charm resistance anyway. If we had dCHR > song MACC stats that could be used, but it'd be ridiculously difficult even if we did.

All of the attributes can be found to within a few points using a combination of Impact and Absorbing Shield, but as the shield would only absorb one of the seven debuffs and it has a 60 minute cooldown, you'd need 7 people with the shield to get all of them.

There are other ways that could be theoretically used, but a lot require more exact knowledge of game formulas. For example, we could figure out monster STR by reverse engineering damage they do to players if we knew exactly how monster physical damage formulas worked.
