Because he didn't die in the whale. On another note, he probably wasn't buried there anyway.

But depending on the variation of the story, Jonah had eaten some of the "fish's" internal flesh to stay alive long enough to 1. be rescued, or 2. find a way to escape on his own. I wonder which culture that story was stolen from, anyone know? (I'm not privy to the knowledge).
